Let us admit that we love the street-side style of Chinese, or Indo-Chinese more than the authentic Chinese food. For the first time, I tried my hands on this and realized it is super easy to make. I agree it is not the healthiest of the dishes but then you should never feel guilty if you enjoy eating something, portion control is the thing. I tried making fried rice with whatever content I had in my fridge and though I have made mushroom chilli here, you can definitely go ahead and make baby corn or gobi chilli with the same recipe. Mushroom Chilli

For Mushroom fritters
  • 200 gms Mushrooms (diced in thick pieces)
  • 4 tsp refined flour
  • 2 tsp cornflour
  • 1/4 tsp baking powder
  • 1 tsp red chilli powder
  • Salt to taste
  • 1 egg (helps in binding but optional)
  • Water to make a consistent batter
  • Oil to deep fry
For Sauce
  • 2 tbsp tomato ketchup
  • 1 tbsp red and green chilli sauce
  • 1 tbsp soy sauce
  • 1 tbsp vinegar
  • 1/2 cup spring onion whites (chopped finely)
  • 1/2 onion diced
  • 1/2 capsicum diced
  • 8 cloves garlic (finely chopped)
  • 1 tsp ginger (grated)
  • 1 tsp red chilli powder
  • 1 tsp sugar
  • 1 tsp salt
  • Spring onion greens for garnish

Fried rice
  • 1 big bowl of steamed rice
  • 1 cup finely chopped veggies of choice (I used all colored of bell peppers)
  • 1/2 cup chopped spring onion white
  • 8 cloves of garlic (finely chopped)
  • 2 green chilies
  • 1 tsp Chings Noodle masala
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • Salt to taste

How to conquer it


Mushroom chilli
  • Mix every ingredient mentioned above for mushroom fritters, except the oil, in a big bowl. Ensure that the mushrooms are covered evenly and the batter is thick without lumps.
  • Deep fry these coated mushrooms till golden.
  • For the sauce heat a pan and add some oil in it.
  • Put in the ginger garlic and saute for a minute.
  • Add the onion whites and saute for a minute
  • Add the capsicum and diced onions and saute for two or three minutes over a high flame.
  • Add all the remaining ingredients(sauces, vinegar, red chilli, sugar, and salt) and sautee for a minute.
  • Add the mushroom fritters and coat them evenly with the sauce.
  • Garnish with spring onion.

Fried Rice
  • Pour some oil in a wok and add the garlic and green chili, saute till brown.
  • Add the onion whites and saute for a minute.
  • Add the veggies and cook for 3 to 4 minutes.
  • Add the masala, vinegar, soy sauce, and salt and cook for a minute.
  • Add the steamed rice, mix everything evenly.
  • Garnish with spring onions.

I have never written such a long recipe. But hold on, it is super easy to make, trust me! Just that you should have all the ingredients. I have not used any fancy ones, just the ones available regularly at home. Also do eat the freshly fried mushroom fritters, you will miss out on a major thing if you don't!
